I know, I know. Long time no see, right? 
Summer vacation do that to you and I must say Hallelujah! 
Wonderful weather, sun all day and plenty meaningless things to do. Just, my kind of summer vacation.  

I hope you all had a very pleasant summer and vacation. 
A little peek into my summer.

Iced Coffee - Summer Style

How to Make a Cold Brew French Press

Makes 1 drink

What You Need
1 1/2 cups cold water, preferably filtered
Ice, to taste
Milk, to taste
Sweeteners such as flavored syrups, caramel, or melted chocolate, optional. (Here I used stevia for sweetness.)

Equipment
Coffee grinder
French press

Instructions
Grind the coffee beans: Grind 1/3 cup of coffee beans until they are coarse enough to be filtered by the French press, yet fine enough to infuse well. On my burr grinder, I grind right in between middle and fine.
Combine the ground coffee and water in the French press: Pour the ground coffee into the French press and top with 1 1/2 cups of water.
Stir to incorporate: Gently stir the coffee with the water until well blended.
Put on French press lid: Make sure the plunger is in the up position.
Place the French press in the refrigerator and steep overnight: Leave the plunger in the up position so the grounds infuse the water overnight.
Plunge to separate the coffee from the grounds: The next morning, plunge the French press to separate the coffee from the grounds.

Make your iced coffee:
Fill a glass with ice cubes and fill partway with milk. Fill the rest of the glass with iced coffee. Stir to combine and enjoy!

Bookish Poem Reader

While in NY I picked up a few books, I'm kind of historian or poems book type - so it wasn't really weird when I pick this book up Immortal Poems of english language, because hallo if the titel doesn't make you want to pick book then the look would. I don't know but as I have said before I'm a sucker for packaging and this little thing just look so amazing. I completely recommend it for other poem reader. Since I'm not from a english speaking country I didn't get to read these poems when I was still in school or I did, but only a very few of them.
You can get this in Barnes and Noble - which I kind of jealous about. Really Americans have everything, okay I only kidding. But I would love a Barnes and Nobel in my town so I can go book crazy in there.

Red Velvet Cupcakes Love

Cupcakes love, Yeah! Everyone love cupcakes or I hope so. These little cute sweet things are fantastic for any occasion and I mean any occasion. So I decided to make these lovelies for my little brother when he ask for cake earlier this morning. To be earnest this isn't really good for those who are training or on a diet for summer, like myself. But cheat days are allowed - well for me they are or else I would go nuts without sweet things in my life. So I hope you would allow yourself to enjoy these lovelies.

Ingrédients
1 large egg
buttermilk (120ml)
1 tbsp of white wine vinegar
1 tsp of vanilla essence
2 tbsp of red food colouring (30ml)
sunflower oil (180ml)
self raising flour (200g)
caster sugar (225g)
1 heaped tsp of cocoa powder
pinch of salt



frosting
cream cheese (100g)
butter (50g)
icing sugar (200g)
1 tsp of vanilla essence 

How to 
Preheat oven to 180°C  

whisk the egg in a bowl for a minute. 

add buttermilk, vinegar, vanilla, and sunflower oil. 
dump the flour, sugar, cocoa, salt and food colouring into the bowl and mix together. 
whisk for a few minutes until combined and smooth. 
spoon into cupcake cases sat in a muffin tray so they are ¾ full. 
bake in the oven for 25 minutes until risen and cooked - test with a knife and it should come out clean. 
cool the cupcakes in their cases. 
slice a little off of the top of the cupcakes to make it flat and keep the trimmings to one side. 
beat the cream cheese and butter in a bowl until light and fluffy with the vanilla. 
add icing sugar and stir until combined. 
spread a little icing on top of the cupcake and crumble some sponge off-cuts on top to decorate. 

Chanel Noir - Darker Notes

Not long ago my only perfume became empty - this is really a shock to me since my mother tend to borrow it, hers words not mine. So since my mother used all my perfume for special occasions up, she felt a bit guilty about. So here it is - my new perfume which I would properly share with my amazing mom. She kind of brought it for share I think. But now to the more exciting part it smells lovely dark. I don't know how else to describe it. I'm not very good at describing perfumes.   

Striking top notes of grapefruit and bergamot accentuate the rose and jasmine infused floral accord, while notes of Indonesian patchouli and sandalwood add warmth. This is how the perfume is describe by the media and I have to agree. However this scent is not for everyday - or at least not my kind of everyday. I think it would become a bit too much for school.

That I want to say is I would recommend this for people who likes a perfume with darker notes. I love using this for a night out and often gets many compliments on the scent.    

At last I would like to say sorry for the picture - My friend has borrow my DSLR and therefor the poor excuse for a picture.

Sometimes I just buy stuff to make my life more easy - often I find it as therapy, because to tell the truth without shopping my life would be a mess. 

To be earnest the intro is just a excuse for buying when I don't have the money for it this month - it's kind of sad. But I'm super happy about the items I got from Asos.com

Macaroon, Love and South France

Love, that's the thing. Summer equals love which are all right, not all of us are dating and have a loving significant other. However if food is allow to be a lover I would say food is my biggest lover this summer. With summer, sunshine and France!

My parents decided that this would be special and therefor France this year! I'm so excited about it, since it has been some times since I had a vacay in France, it's going to be wonderful with som rest from school and work.

I Dreaming until then.  

Rhubarb Pie

Ingrédients 

500 g of rhubarb into small pieces 
1/2 tbsp cornflour 
1 teaspoon ground cinnamon 
100 g icing sugar 
crumble dough 
60g rolled oats 
90g plain flour 
3 tablespoons powdered sugar 
125 g of cold butter

How To 
Mix rhubarb, potato flour, cinnamon and icing sugar together and put it in a ovenproof pie dish (about 24 cm in diameter). 

Crumble Dough 
Mix oatmeal, flour and powdered sugar in a bowl. Cut the butter into small pieces and crumble it into the flour mixture. Spread batter over the rhubarb and bake pie in middle of oven - until golden. 

Serving 
Serve the warm rhubarb pie with ice cold cream. 

Tip 
Instead of cream you can serve ice cold lightly whipped vanilla cream. 

Baking Time 
About 25 min. at 225 °.

We Invented Paris

So I participated in SPOT-Festival in Aahus, Denmark and heard these guys, We Invented Paris! Amazing, amazing I will and must say - God, I love finding new music and artist to enjoy. Their performance was a lovely experience. 

 My favorite from their live performance was Mont Blanc hear it here.

I have become that girl. You know that girl who looooooves only one color - not because I really wear color, to be earnest I do it really rarely. Mostly I only wear grey, white and black - not because I'm depressed it just the skandinavisk fashion on minimalism. So I wonder where my love for the color scarlet came from. Well I have always love the classic red lipstick, I only own red lipsticks - no pink gloss for me no. But then it just extended to clothes, shoes and everything really - I even pick food or things with packaging with red on it.

Not long ago I got this quite popular nail polish from Chanel - named Pirate. I like the color but the formular for the polish isn't really good. I would not recommend it for anyone who hate lying five to six coat of nail polish - hard work I tell you!

Book Nerd & Proud

I'm what you would call a book nerd - well, I'm kind of proud of it. 
Poems is what I really enjoy reading, not too long, not too short on meanings - short sentences with a lot of meaning and extra thoughts to think about later. Well, maybe years later were you can talk about it with your friends over coffee - love the idea already. 

Well and since I'm a girl and have to confirm the stereotype of loving all things that have some red, girly and love in it - I'm presenting you .... Love & Misadventure   

- The author just makes me want to invite her over for tea and colorful macaroons and talk about all the boys you ever have in your life, both those you have crushed on and those idiots who dumped you.

Here is my new pair of summer shoes, quite amazing! Birkenstock have been in for some time and well I didn't jump on the trend at first - but I couldn't let these babies be alone in the store all alone...

Well, sometime ago I had my big 18 birthday and guess what. I got late birthday gifts ever since by all  my relatives and friends, to be earnest it is like people don't really give gifts anymore or maybe they do? Well, back to the main point I got late gifts and kind of loving it. The feeling of getting a lovely little gift weeks after your birthday just makes your day.

I Left my Heart in New York

Here is some sneak-peak of my trip to NY. First and foremost I want say - it was absolutely wonderful travel and experience. It's a city I would love to rediscover someday - and I will. 

We were house near by Central Park, actually only three or four blocks from the Riverside Hotel where we lived. Nice place near every thing. It was nice, nice - but live-able. Well, it wasn't like we were on the hotel - much.   

Phantom of the Opera, Cake Boss Cafe, The Statue of Liberty and much more! And of cause I didn't include any of the pictures of the things mention earlier. Shame on me.

Goldies for My Footies

Seems like sandals with gold details is hot for the up coming summer! And to be earnest I may like it a bit. I'm totally in love with the pair from Zara, however I not a big fan of the H2O ones even through it a collaboration with Stine Goya, who by the way is a awesome designer.

Perfect Brunch Pancakes


So I found the perfect brunch pancakes! So I would like to share it with you guys, enjoy. 

Ingrédients
2.5 dl. skimmed milk 
150 grams of flour 
1 large egg 
1 Tbsp. sugar 
1 pinch of coarse salt 
1 tsp. Baking soda 
25 grams Butter

How to

Mix all the above ingredients in a bowl until the dough is uniform. 

Heat the pan, if necessary. one spejlægspande or blinispande and got a little bit of butter. Put the dough in the pan for droppings, which must flow out by itself (about ½ cup.). Bake until the surface bubbles and underside is light brown. Flip pancakes and bake. 

It takes a few minutes on each side. 

Server pancakes in stacks with butter and maple syrup, if necessary. with a little bacon or sausages for if it is to be truly American.
