Nice: French Rivera Paradise

Hi Love, 

This was a unplanned detour for my friend and I. We didn't plan to go anywhere beachy. I didn't even bring a bikini with me so I had to go into a store and buy a entire new set - not even in my size because they were ripped off. What can you expect during the summer time in Nice? 

The beach was quite lovely and the city more so. The colours around town was in light pastel and boy oh boy I do love a lovely pastel pink.

I found a really nice Vegan restaurant that just recently opened while I was there. The community is so amazing and I do love how supportive people are when it's know that you're vegan. Vegan Gorilla is where I had my first vegan sushi bowl and wow, that changed my life. Even my meat-eating friend really enjoyed it too! The owner there was so amazing and lovely. She recommended me KOKO Green for breakfast and wow. Go there! Another thing she recommended me while I was in Nice was to try Socca - a crêpe made of chickpeas.

Sadly I don't have any pictures because I simply couldn't contain myself and ate the food before I could get a good picture of the meal.

#2 Vienna: Places to eat in Vienna

Hi Love, 

I love exploring new places in Vienna and when there I make sure to always try to try something new. But a place I keep coming back to is Veganista, a vegan ice-cream chain that offers the best ice-creams in town. If you ever find yourself in one of the many stores they have, try the poppy seeds! So special and interesting while very delicious. 
I myself cannot wait to come back there and get another three scoops of wonderfulness. Their chocolate ice-cream is divine too! So rich and smooth. Gosh, I could go one for ever.

Swing Kitchen is the typical American Burger place, but vegan. The place has a lovely atmosphere and you always see a lot of people in there. Their fries are a must and when you're there, please don't cheat yourself, order a menu and get a soda. Worth it.

Formosa Food is a place my Austrian friend and I found by chance. We were on our way to the Phil café and somehow, this little restaurant stops us on our way and we had to go in there to explore. The place is hidden, on the side to Mariahilferstrasse. The people in there are so nice and cute - please do try to give them a visit.

Simple Raw Bakery and Bistro has a very special place in my heart. On my first trip to Vienna on my interrail-trip, I went here every single day to eat a proper breakfast. The place was perfect for gluten & lactose intolerant people like my friend and me. 
I absolutely love their Acai bowl, the musli is amazing and their coffee is lovely. 
If you're only on for a small treat please do come here. They're a bakery, their cakes are beautiful, sweet and made with a lot of love.

Hanoi #2 Cong Caphe

Hi Loves

Vietnam has a really big coffee, cafe culture and there are so many cute cafes you can try - check out Hanoi Hideaway and you will know what I mean. But a place that never let you down is Cong Caphe. It's a chain but still - it's amazing


Cong Caphe is quite popular in Vietnam and I understand why - the interior is amazing and the drinks better. Cong Caphe coconut coffee is out of this world. I made everyone I know and have meet during my travels to try it out.

Romantic Alsace

Hi Love 

Yeah, I used a filter for my pictures here. Do not judge me! I thinks it looks nice and lovely. 
If you have the opportunity to go to Alsace, Colmar or just the cities around Colmar do it! It's so beautiful and romantic. You feel like you are back in a time with the small and cozy houses and going through the streets with the love of your life, hand in hand it would be magical, or I imagine it would be. I personally would know nothing about it(insert smirk smiley emoji here).

I lived in Kayserberg while staying in Alsace. Not far from Riquewihr which was just a stunning small town. There was everything from castle, yeah, they had like three, stork nests and the Tour des Voleures, The Thieves Tower with tortur chamber! You felt like you were back in 1600s or 1700s or in a Disney movie looking for Prince Charming, no, well I sure did, haha, I'm joking, mostly.

Hi Love

I wanted to share something very tiny and delicious - just because it's monday. No explanation need there.  
Anthon Berg a Danish chocolatier company had not long ago released these lovelies and God! I'm in love and it's dangerous.

Let me explain: 1. They are beautiful, perfect for gifts and such - just a reminder to people who needed advise to buy me a gift, hihi.
2. The well taste, AMAZING! 
3. So many different flavor. Something for everyone! 

   

Iced Coffee - Summer Style

How to Make a Cold Brew French Press

Makes 1 drink

What You Need
1 1/2 cups cold water, preferably filtered
Ice, to taste
Milk, to taste
Sweeteners such as flavored syrups, caramel, or melted chocolate, optional. (Here I used stevia for sweetness.)

Equipment
Coffee grinder
French press

Instructions
Grind the coffee beans: Grind 1/3 cup of coffee beans until they are coarse enough to be filtered by the French press, yet fine enough to infuse well. On my burr grinder, I grind right in between middle and fine.
Combine the ground coffee and water in the French press: Pour the ground coffee into the French press and top with 1 1/2 cups of water.
Stir to incorporate: Gently stir the coffee with the water until well blended.
Put on French press lid: Make sure the plunger is in the up position.
Place the French press in the refrigerator and steep overnight: Leave the plunger in the up position so the grounds infuse the water overnight.
Plunge to separate the coffee from the grounds: The next morning, plunge the French press to separate the coffee from the grounds.

Make your iced coffee:
Fill a glass with ice cubes and fill partway with milk. Fill the rest of the glass with iced coffee. Stir to combine and enjoy!

Red Velvet Cupcakes Love

Cupcakes love, Yeah! Everyone love cupcakes or I hope so. These little cute sweet things are fantastic for any occasion and I mean any occasion. So I decided to make these lovelies for my little brother when he ask for cake earlier this morning. To be earnest this isn't really good for those who are training or on a diet for summer, like myself. But cheat days are allowed - well for me they are or else I would go nuts without sweet things in my life. So I hope you would allow yourself to enjoy these lovelies.

Ingrédients
1 large egg
buttermilk (120ml)
1 tbsp of white wine vinegar
1 tsp of vanilla essence
2 tbsp of red food colouring (30ml)
sunflower oil (180ml)
self raising flour (200g)
caster sugar (225g)
1 heaped tsp of cocoa powder
pinch of salt



frosting
cream cheese (100g)
butter (50g)
icing sugar (200g)
1 tsp of vanilla essence 

How to 
Preheat oven to 180°C  

whisk the egg in a bowl for a minute. 

add buttermilk, vinegar, vanilla, and sunflower oil. 
dump the flour, sugar, cocoa, salt and food colouring into the bowl and mix together. 
whisk for a few minutes until combined and smooth. 
spoon into cupcake cases sat in a muffin tray so they are ¾ full. 
bake in the oven for 25 minutes until risen and cooked - test with a knife and it should come out clean. 
cool the cupcakes in their cases. 
slice a little off of the top of the cupcakes to make it flat and keep the trimmings to one side. 
beat the cream cheese and butter in a bowl until light and fluffy with the vanilla. 
add icing sugar and stir until combined. 
spread a little icing on top of the cupcake and crumble some sponge off-cuts on top to decorate. 

Rhubarb Pie

Ingrédients 

500 g of rhubarb into small pieces 
1/2 tbsp cornflour 
1 teaspoon ground cinnamon 
100 g icing sugar 
crumble dough 
60g rolled oats 
90g plain flour 
3 tablespoons powdered sugar 
125 g of cold butter

How To 
Mix rhubarb, potato flour, cinnamon and icing sugar together and put it in a ovenproof pie dish (about 24 cm in diameter). 

Crumble Dough 
Mix oatmeal, flour and powdered sugar in a bowl. Cut the butter into small pieces and crumble it into the flour mixture. Spread batter over the rhubarb and bake pie in middle of oven - until golden. 

Serving 
Serve the warm rhubarb pie with ice cold cream. 

Tip 
Instead of cream you can serve ice cold lightly whipped vanilla cream. 

Baking Time 
About 25 min. at 225 °.

Perfect Brunch Pancakes

So I found the perfect brunch pancakes! So I would like to share it with you guys, enjoy. 

Ingrédients
2.5 dl. skimmed milk 
150 grams of flour 
1 large egg 
1 Tbsp. sugar 
1 pinch of coarse salt 
1 tsp. Baking soda 
25 grams Butter

How to

Mix all the above ingredients in a bowl until the dough is uniform. 

Heat the pan, if necessary. one spejlægspande or blinispande and got a little bit of butter. Put the dough in the pan for droppings, which must flow out by itself (about ½ cup.). Bake until the surface bubbles and underside is light brown. Flip pancakes and bake. 

It takes a few minutes on each side. 

Server pancakes in stacks with butter and maple syrup, if necessary. with a little bacon or sausages for if it is to be truly American.

The Love for Chai Tea

Okay, so I admit that I may have a little cute addiction when it comes to Chai Lattes. But earnestly, many does & loves it! My favourite chat tea is from David Rio. 

Since I found out that I was buying the Chai for triple the price at my local café, I decide to find a cheaper alternative since I'm a student, after all. And the perfect alliterative was David Rios - Tiger Spice which is the original from the brand. I haven't tried any of the others Chai's yet, but believe me when I say, I will.
